親子丼Oyako Don (Chicken & Egg over Rice)

Ingredients
     1.       Spring onion – sliced finely
     2.       White Onion – sliced finely
     3.       2 Chicken thigh (remove bone, fat,skin) – sliced  bite size
     4.       2 eggs – lightly beaten (yolk and white not completely mixed)

Steps:
    1.       Add 1 portion dark soya sauce into pan
    2.       Add 1.5 portion of Japanese Mirin (wine) – alternative: apple juice + honey
    3.       Add 4 portion of water
    4.       Bring to boil

    5.       Add Bonito Flakes (dried tuna flakes)
    6.       Add chicken pieces
    7.       Add onion when chicken is half cooked
    8.       Cover lid until completely cooked
    9.       Add eggs over 2 times  Tips:  Keep the eggs soft (poke, do not stir)   
   10.    Add spring onion (cover lid for 10sec)

   Serve over cooked steamed rice
