Gula Melaka Apple Cake

Preheat oven 170degree. Grease mould 19x8x7cm
Part A:
2 apples (diced) ~320g
55 g gula melaka
(chopped)
2 tsp lemon juice
(Cook above on med fire
till the sugar thickens. Set aside to cool)
Part B:
105 g plain flour
1 tsp (4 g) baking powder
1 tsp cinnamon powder
(Sift the above. Mix.
Set aside)
Part C:
105g unsalted butter
(room temp)
95g castor sugar (I use
brown sugar)
(Mix above on high speed
till fluffy)
Add 2 eggs ~115g
(beaten) in batch. Mix well
Add Part B into C by
batch
Add 1 tsp lemon juice
Optional: add citrus
peel cube
Mix well till no clumps
Pour ½ batter into mould.
Spread Part A evenly.
Pour remaining batter. Spread
evenly.
Optional: decorate the
top with almond flake
Bake 45-50min 170deg.
(with my own mould 7x12x23cm
I use 28min)
