Banana Walnut Chocolate Chips Muffin

(adapted from Laura Vitale)

Ingredients:
1 2/3 Cup of All Purpose Flour (233g but I use 250g) - sifted
1 tsp Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
¼ tsp of Cinnamon
½ Cup of Sugar (100g but I reduce to 80g. Can use brown sugar)
½ Cup of Chocolate Chips – coat with 3 tbsp sifted flour
½ Cup of Vegetable Oil
2 Eggs
3 Mashed Bananas

¼ tsp of Vanilla Extract (I skip this)

½ Cup of Walnut

Method:
1) Preheat your oven to 180 degrees.
2) In a small bowl add the chocolate chips and 3 tbsp of flour and mix until all the chocolate chips are coated in the flour. Set aside.
3) Mix well flour, baking soda, baking powder, salt, cinnamon and sugar.

4) Add in one by one and mix well – Oil, Egg, Banana
5) Fold in the chocolate chip and walnut.
6) Divide the batter into your muffin pan (make 9) and bake for about 18 minutes.
