Braised Dried Oyster with Mushroom, Sea Cucumber
Braised Dried Oyster with Mushroom, Sea Cucumber (Courtesy of MIL) • 50g (abt 16pc) Mushroom (soak 4hr till soft and cut into pieces). Keep aside the water. • 20g Fa Choy (soak 30min. Wash, blanch with hot water. Add oil. Wash) • Sea Cucumber (cut into pieces) • 100g (abt 12pc) Dried Oyster (wash & soak 5min. Clean. Soak 30min) • Chestnut • 250g roast pork / chicken (chop into pieces) • Optional Dried scallop,Dried Fish stomach 花膠 • 3pc Small onion (whole) • 7pcs Garlic (whole, crushed) • 2 Slices of Ginger • 1tbsp花雕酒 Chinese wine • 1 tbsp oyster sauce • 20g rock sugar • 1 tbsp dark soya sauce 1. Add oil, fry ginger, garlic& onion till brown 2. Add roast pork. Add mushroom. 3. Add Chinese wine 4. Add sea cucumber, fish stomach 5. Add sugar, dark soya sauce 6. Add oyster, chestnut, scallop 7. Add water from mushroom/oyster/scallop 8. Braise about 20-30min on medium fire. Watch water content. Braise till sea cucumber, fish stomach is soft. 9. Add oyster sauce (first mix with water) 10. Test if cucumber/mushroom/oyster are soft & cooked 11. Add sesame oil 12. Add Fa Choy (bit by bit) and braise 10min 13. Add Corn flour water (to reduce water if necessary)
