Grilled Vegetables

Grilled Vegetables

1 eggplant
250g zucchini
200g carrot
3 capsicum
70g button mushroom
fresh thyme - finely chopped
fresh parsley - finely chopped
170ml olive oil
1 tbsp lemon juice
3 tbshp chopped fresh basil
2.5 tbsp balsamic vinegar

Sprinkle with salt, pepper, thyme, parsley, basil. Marinate 2hrs
Grill 15-20min at 180degress
Drizzle Balsamic vinegar
